Jumped back on track . . .

While I haven't completely derailed myself I've still been taking a few easy options.  I am lucky I haven't put all my weight back on but that's because mostly I do keep low carb. 

To be honest my real problem is that I haven't been organised.  To be honest I've gotten lazy and complacent and totally out of routine.
I've chosen to let things happening around me - get to me.

Revisiting the past . . .

I just haven't been able to get things to click again properly.  I go great guns for a few days then I have a hiccup.  It was good to read the early parts again about how well I was doing.  Although I couldn't seem to read past March when Mr T had his accident.  It brought back too many bad memories and the start of the year from hell.

Going back to what I did in the beginning has refreshed my brain.  Probably blogging more would help too.

Things have changed a wee bit at home too.  I have a girlfriend staying with us at the moment.  She sold up and went to Aussie but things didn't work out so now she's home and having to start over again.   She's been staying with us since ANZAC Day until she can get back on her feet.  She got a job last week and just waiting to find out her hours.

Got a lot on my mind at the moment, lots of pressure.

Mr T had to rush up to Whangarei last weekend as Krystal went in to hospital to have her gallbladder removed. He stayed with Jamie and was there to be with Krystal in the morning when she went in and there when she came out of surgery.  It was good for them all.  We're hoping for us both to get up to Whangarei next weekend but we will have to see.

I am so glad it's Friday.  This one in particular.  I've had a few issues to deal with today.  One of them being the neighbour's delivery of boxwood ending up in my driveway by mistake.  They tried to get me to buy the load so they didn't have to move it - no way Jose - I have a heat pump.  So they had to come back out and pick it up.  Not my problem.

So I am really looking  forward to going home tonight and doing absolutely NOTHING.

My brain definitely needs a bit of reprogramming.

It's taken a while . . .

But the scales are heading down again.  

I'm really enjoying finding new recipes and trying them out. 

I absolutely love cauliflour mash.  I would never have thought of it as an alternative to potatoes.  

I came across this  recipe and I thought I might try it out.


1 Head of cauliflower
1 Tbsp basil and/or oregano
1 Tbsp onion powder
1 Tbsp garlic powder
1 Tbsp white pepper
2 Eggs
Salt, to taste
Sharp cheddar or Parmesan cheese optional

Boil the florets and stems of cauliflower until well cooked. Transfer to Vitamix (or food processor) and blend until smooth. Let cool.
Add spices and eggs. Mix very well.
Grease a baking sheet or stone or use parchment paper. Pat down cauliflower mixture until about 1/4 to 1/2 inch thick, try to get as even as possible. If you want to add cheese, sprinkle over the top of the "crust".
Bake at 350 degrees for about 20 minutes. Then increase to broil for about 10 minutes, or until edges and cheese lightly brown. If you would like even crispness take out of the oven and cut into slices, then flip over and brown the other side.

Looks quite simple and easy to make.  My kind of recipe.

My kitchen has arrived.  However it will take a while before it goes in.  But I'm happy to wait.  

I was a bit frantic on Sunday.  Mr T went to Auckland to pick it up and I was so worried because of the weather.  The night before we'd had a pretty loud thunderstorm with more of the same forecasted along with gale force winds.  He made the decision in the morning to go and managed to get up their and get loaded before the heavens opened up again.  He got back home around 5 - him and the kitchen intact. 

So now it's waiting to be remodelled for my kitchen.  I will be patient.  I will do my best.  I will not nag.  Maybe a hint or two every now and then wouldn't hurt tho.

Getting a little bit excited . . .

Way to go Friday . . .

On Sunday Mr T is going to Auckland to get my new kitchen!!!  I chose not to go up with him as I'd end up a wreck watching out for potholes and such.  Easier for me to keep a "what I don't know, won't hurt me approach" in this instance.  Probably better for Mr T's nerves as well, me not being the passenger driver.  

Instead I shall stay at home and do my GST.  Oh how lucky am I.  At least I shall be at the workshop when they bring my new baby home.

I'm so looking forward to having a new kitchen - with workable space and plenty of cupboards - and not to mention a pantry.   

I can't wait to start to cooking up a storm.

Just been to the supermarket to stock up on groceries for the week.  My weight loss has slowed down, in fact stopped so I'm going to mix things up a bit and cut down on my pumpkin.  I've had quite a bit of pumpkin over the last couple of weeks.  As much as I love it I'm going to have to say no more pumpkin soup for a while.
